- Coriander Seeds (2 oz)
- Fennel Seeds(0.5 oz)
- Cumin Seeds (1 oz)
- Black Cumin Seeds (0.5 oz)
- Black Peppercorn (0.5 oz)
- Dry Red Chillies (6-8)
- Fenugreek Seeds (1/3 oz)
- Curry Leaves (20-30)
- Cinnamon (3 sticks, optional)
- Cloves (3, optional)
Instructions
- Add a handful of curry leaves to a pan and dry roast them for a min on low, medium flame till it turns crispy. Remove from the heat and keep aside.
- Dry roast red chilies till it changes color a bit. Keep aside.
- Add coriander seeds, fennel seeds, cumin seeds, peppercorns, and fenugreek seeds to a pan, and roast them on a medium flame. You don’t need to get them browned.
- Stir together till the pleasant aroma comes. Keep aside and allow it to cool.
- In a mixer, granulate all the roasted ingredients into a fine powder.
- Store the masala in an airtight jar. The chicken masala powder is ready. Keep it out of the moisture by closing the lid tightly after every use.

- Chicken –(2.20 lb.)
- Oil (0.75fl. oz)
- Onion (2, finely chopped)
- Green chili (2)
- Ginger Garlic Paste(0.75 oz)
- Tomato chopped (2)
- Turmeric powder(1/3 oz)
- Chili Powder(1/6 oz)
- Chicken Masala Powder(1.5 oz)
- Salt (as per taste)

- Few Mint leaves
- Water(6 fl. oz)
Method:
- Heat oil in a wide saucepan; add finely chopped onions, green chili and sauté well until onions turn golden brown.
- Now add ginger garlic paste and fry it for 2-3 minutes.
- Add tomatoes, tomatoes, turmeric powder, chili powder, chicken masala powder and mix thoroughly.
- Add chicken to the masala mix and fry for about 5 minutes. Add salt and mix it well.
- When the masala and chicken are mixed well, and the chicken is no longer pink, then add water to the chicken. Cover the chicken and let it cook on a medium flame for about 10-15 minutes.
- When the chicken is half done, add coriander leaves and mint leaves to infuse the flavors. Close the lid again & cook the chicken.
- Finally, garnish it with coriander leaves and curry leaves (optional).

- Chicken Breasts (2.2 lb. cut into bite-sized pieces)
- Vegetable Oil (0.5 oz)

Method
- Take a pan and add the chicken, small amount of water, salt, and 2 ½ tsp of Chicken Masala Powder. Let it cook for 15 minutes.
- Heat 1 tbsp oil in a pan. Sauté chopped onion for few minutes
- Now add 1 tbsp ginger and garlic paste, chopped green chili, and curry leaves till onions turn golden brown.
- Add the cooked chicken and add 1 ½ teaspoon of Pepper chicken Masala and gravy of cooked chicken.
- Add half a glass of water for gravy. Let it cook for 15 minutes or until done.

- Boneless chicken (1.1 lb.)
- Egg (1)
- Corn flour (1/3 oz.)
- Soya Sauce (2 mL)

- In a mixing bowl, add boneless chicken, egg, cornflour, soya sauce, chili chicken masala powder and salt to taste.

- Heat oil in a pan to deep fry marinated chicken.
- Don’t over-crowd the pan, fry the chicken in batches. Fry until it turns dark brown
- Heat 4 tbsp. oil in a pan
- Add roughly chopped garlic, and Julian cut ginger and stir-fry for 2 minutes.
- Add green chilies, chili chicken masala powder, soy sauce, chili sauce, ketchup, and salt to taste.
- Stir fry for 3 minutes and then add a cup of water for gravy.
- Let it cook for a few minutes until it starts simmering.
- Add the fried chicken into the pan, add onion and capsicum.
- If the sauce is not thick enough, mix water and 2 tsp of cornflour and add to the chicken. Let it cook for 5 minutes.
- It’s ready to serve. Garnish with spring onions.
